The Gastronomic Forum Barcelona 2023 will focus on the commitment of cuisine and gastronomy to sustainability and the preservation of biodiversity. At this event, renowned chefs will highlight the projects they are leading for the protection of native species and local plant varieties, as well as the revitalization of traditional preparation methods. In addition, from their establishments, these chefs will be promoting a positive social impact. In addition, through master classes, thematic sessions and presentations, experts and professionals in the culinary field will present the latest trends and address the significant challenges facing the industry in the future.

Another focus of the Gastronomic Forum Barcelona 2023 program will be sustainable cuisine and biodiversity, with prominent chefs leading innovative social projects. Maria Marte, Kamilla Seidler, Joke Michiel and Manon Fleury will share their experiences in this area. The return of the fire cooking method will also be highlighted, with an impressive Josper grill on the main stage. Another trend will be the "new pantry," focusing on traditional preserves and new preservation techniques. Jesús Segura and Andrés Torres will talk about this typology of products.

The event will include tributes to women in the rural world, The Baker Award, the Best Hotel Maître d' Award, as well as areas dedicated to congresses, startups and debates on the "third way" in professional cuisine. There will also be a market of organic producers and a new space dedicated to cocktails and spirits called Forum Bar.

Gastronomic Forum Barcelona 2023 will be the largest edition to date, with more than 87% of the exhibition space reserved and the expected participation of more than 350 exhibiting companies, including prominent brands such as DAMM, Makro, Estrella Galicia and Rational, among others, representing a 20% growth compared to the previous edition in 2022.

The chefs

This year, many of the restaurants participating in GFB have a special distinction in addition to the traditional Michelin stars: the green Michelin stars (V). These stars recognize establishments that stand out for their innovation in preserving the environment through resource management and waste reduction. Among the prominent chefs who will be part of GFB 2023 are:

  • Joan Roca (El Celler de Can Roca ***+*V, in Girona).
  • Jesús Sánchez (El Cenador de Amós ***+**V, in Cantabria)
  • Oriol Castro and Eduard Xatruc (Disfrutar *, in Barcelona)
  • Albert Adrià (Enigma, in Barcelona)
  • María Marte (Sky Europa Rooftop, in Dominican Republic, and Fundación María Marte)
  • Bego Rodrigo (La Salita *+*V, in Valencia)
  • Eric Verbauwhede (Pic Group ***, in France)
  • Poul Andrias (Koks **, in Greenland)
  • Javier Olleros (Culler de Pau **+*V, in O Grove, Pontevedra)
  • Nicolas Decloedt (HummusxHortense *+*V, in Brussels, Belgium)
  • Zineb Hattab (Kle *V, in Switzerland).

All of them are internationally renowned chefs who will be present at GFB 2023.

The spaces of Gastronomic Forum Barcelona in 2023

In addition to the exhibition space, which in this edition will occupy more than 6,000 m2 and is the best business platform for companies and professionals in the hospitality and gastronomy, Gastronomic Forum Barcelona offers attendees 6 more spaces to turn the visit into a complete experience of learning and exchange of ideas:

  • Auditorium: the space that provides the opportunity to experience an extraordinary culinary show with live presentations by the most renowned chefs, such as Joan Roca, Albert Adrià, Oriol Castro or Eric Verbauwhede; thematic talks and conversations focused on (bio)diversity; the transformative impact of cuisine; the role of women in gastronomy and fire as a primordial element.
  • Workshop: the closeness between speakers and audience that Gastronomic Forum Barcelona provides is evident in workshops that include live culinary demonstrations, followed by a tasting of the final dishes. Prestigious masters, such as Bego Rodrigo, Juan Sahuquillo and Javier Sanz, will enlighten us on the topic of biodiversity in gastronomy.
  • Forum Lab: The place where ideas take shape. Conversations, talks and roundtable discussions led by leading experts in a wide variety of fields, in collaboration with three prestigious partners: the Barcelona Centre de Disseny, the Fundación Restaurantes Sostenibles and the Clúster Foodservice.
  • Classrooms: In the Aula Catalunya, Aula del Mercat Metropolità and Aula Makro spaces, culinary demonstrations and short educational sessions led by experts will be held, highlighting the importance of the sector's products.
  • Forum Dulce: a space for the dissemination of pastry, ice cream and bakery, which brings together the best pastry chefs in the sector with their novelties. Forum Dulce hosts the Best Panettone contest and the ESPAISUCREthebestdessert 23.
  • Forum Bar: the place where the trends of the liquid universe meet the mixology applied to the field of bars and gastronomy. Here you will find cocktails, high quality distillates, healthy drinks and specialty coffee. In addition, they will hold the Maîtres de Hotel competition, an event that will honor the work of the head waiters in hotels.
